I made a new loading screen. And you know, the loading screen has the Copy Rights/All Rights Reserved stuff and for some resolutions it might not be seeable... is that.. illegal?

It is illegal if you distribute the loading screen mod, even for free. Basically, you can do whatever you want to the game, but you cannot share any modification, parts or rights of the software for money or for free, except for permitted material.
The permitted material is the gameplay modifications, graphic modifications, custom maps and maps based off original maps, provided they are distributed for free (that is, no profit is gained by you from EA's work).
You can, however, make any changes to the game as long as no one else uses them, and it doesnot modify online play (except the permitted material I mentioned above).
That image? Well, I'm sure my info applies here too. He can mod that screen for himself, but he cannot distribute that changed screen since it displays the copyright and the title.
You can, however, make a new screen that can be added to be displayed right after the launching screen. If possible, reduce the time for which the launching screen is displayed, and add a new screen of your desire.
Also, you can mod the loading screen, the screen that turns up right after the launching screen and has the rotating Ring in it. Since it doesnot display the copyrights, you can mod that screen.
Infact, you can mod all loading screens except the launching screen that displays the copyrights, and the starting logo-display of EA, Tolkien Enterprises etc.
